What “modern Canadian” means here
It is a location and a pantry, not a costume.
The phrase is on the door because people ask.
It means we cook in Lethbridge, with Canadian meat and grain and fish, and with techniques that are current — not with props. There is no theme night. There is no list of regions we are “inspired by.”
If a dish is bison tartare, it is because the meat is good and the cut makes sense raw. That is the whole argument.
